Fruit Jelly Vegan Pancakes

Are you ready for some Vegan pancakes refined with your favorite fruit jelly? You don’t need butter or eggs for this recipe and I tried to keep the amount of sugar to a bare minimum and used some of my beloved Vegan agave nectar instead!

What’s great about these pancakes is that you can create so many varying flavors by adding different sorts of fruit jellies on top. I already tried strawberry, raspberry, blackberry, and mango. I’m not a fan of cherry jelly, although I love to eat fresh cherries, so I skipped that one. What I’m going to try next time is peach, plum, and orange jelly, which should create a super fresh taste perfect for summer.

Ingredients For Fruit Jelly Vegan Pancakes:

  • 1 cup all purpose flour
  • 1 teaspoon sugar
  • 1 tablespoon agave nectar
  • 1 cup coconut milk
  • a pinch of salt
  • 1 teaspoon baking powder
  • 1 tablespoon coconut oil or other
  • Favorite fruit jellies

Mix all dry ingredients in a large bowl. Pour in the coconut milk and agave nectar. Combine everything properly. Keep stirring until all lumps have vanished.

Grease pan with oil and put on medium heat. Pour batter into pan and flip after about one or two minutes. Wait another one or two minutes and continue with next pancake. Remember to let it sit and allow for cooling. Add fruit jelly as topping. Serve and enjoy!
