I know recipes like this one have been floating around the Vegan blogosphere for a while now, but the first time I heard of "healthy ice cream" was when Dr. Oz dedicated half of his show to the move "Forks Over Knives". I thought it was a really great idea and a really nice alternative to ice creams that are loaded with refined sugars. I was actually afraid to even call this a recipe since it really takes little effort to make and you really could use any fruit you'd like. I just happened to have frozen strawberries on hand. I can't wait to try this with other flavors! If you're looking for a sweet and healthy dessert, this is definitely it!
Ingredients:
- 2 bananas - sliced and frozen overnight
- a pinch of cinnamon
- Experiment with 1/4 cup of your favorite frozen fruits! I used 1/4 cup strawberries!

I did. And frozen strawberries. It's probably just my food processor (or my impatience), I just ended up with lots of strawberry bits throughout. Yours looks more smooth. Anyway it was really tasty so I'm not complaining! I have a feeling I will be using this recipe a lot this summer!

ReplyDeleteI used your idea to create a dessert for my dinner guests tonight. To the bananas I added frozen watermelon chunks,mango,lime and pineapple juice, a teaspoon coconut extract and gave this a spin in the blender. I froze everything in a shallow pan and later scooped it all back into the blender with a bit of orange juice. The results were off the chain! The texture was much like soft serve ice cream. My guests loved it!Thanks for a versatile recipe!

ReplyDeleteIt does taste like banana + whatever flavorings you add! Just make sure whatever you have goes well with banana (chocolate and mint...not so much.)

ReplyDeleteI just made this and it was a-maz-ing! My food processor is old and didn't like being fed just frozen fruit so i had to add a little bit of unsweetened coconut milk to get it moving properly but the result was still fabulous! Thanks for the recipe!

ReplyDeleteI was SO happy Oz had FOK on his show......I always DVR show to see whether is is pushing Salmon or Swiss Chard. Usually it's salmon & my husband laughs his ass off & makes fun of him.
