Banana Split Pie


I recently went through my mom's recipe collection again, looking for sugary inspiration and I stumbled upon one that was given to her by one of our family friends. Actually, the family friend I'm talking about has a daughter who's vegan. So this recipe is dedicated to you Jennifer! Next time I'll have to make it the way your Mom actually had it written down.

So I should probably explain how I went wrong. On the recipe card, it had all the ingredients and directions on the front. It basically said to throw the ingredients in a blender or food processor (which I did) and put into a pan and bake for 10 minutes to set. So I did. I then proceeded to flip over the recipe later and realized that was the directions for the pie crust alone, not the filling. Oops. I'm definitely going to make this again since it's so good! You'll just have to wait for my 2nd edition!

Crust Ingredients:

  • Somewhere around 40 vanilla wafer cookies
  • 1/4 cup melted margarine (I used Earth Balance Margarine)

Blend the cookies in a blender or food processor until crumbly. Add melted margarine and process until blended well. Press firmly into a 9 inch pie pan. Bake at 350F  for 5-10 minutes until set. Cool before filling.

Filling Ingredients:
  • 2 medium bananas
  • 1 quart of vegan strawberry ice cream, softened
  • 8 oz of canned, crushed pineapple
  • 1 cup of vegan whipped cream
  • 1/4 cup chopped nuts

Put all the ingredients in a blender or food processor and blend until well combined. Pour into the cooled pie crust. Top with chopped nuts and chocolate chips. Freeze for 4 hours or until firm. Remove from freezer 30 minutes before cutting.

Vegan Confessions
So off the topic of the pie for a second, this week I came up with the idea of "Vegan Confessions". I know we'd all like to think we're perfect, but we're not. Also, I know being "Vegan" doesn't automatically make you a certain way, we're all so completely different! What spawned this idea was that I was sitting in the kitchen at my Aunt and Uncle's house and Keeva was lying next to me. Then I noticed a bug crawling on her and as I took a closer look, it was a tick! Now, she's had ticks crawling on her before and I usually go put them outside, but this time I flushed it down the drain, and guilt ensued.

"Hi, My name is Matthew, and I killed a bug" There, I said it! Does anybody else have any Vegan confessions they'd like to fess up to? Vegan Heartland is a safe place, so don't be shy!

  1. Hi Matthew, my name is Vanessa and yesterday while I was riding my bike I ran over a snail. I was so mad at myself for not swerving more and am still sad about it. I mentioned it in my blog yesterday but saw your confession and wanted to share.

  4. First, let me say this pie sounds off the chain delicious! My mom used to make this as well, and I thought I'd never partake again.

Two days ago I ran over an animal.That has never happened to me before(actually,it happened to the animal,not me)and I feel so bad.It happened so fast I couldn't avoid it.I couldn't even tell what kind of animal it was,that's how fast it went.I feel so horrible,and I hope that never happens again.Thanks for letting me get that off my chest!

  6. Our playroom has been getting all sorts of bugs lately, including silverfish (eiwww!!!) so I sprayed RAID all around the edges of the room :( I don't want to kill bugs, but I don't want them in my house either!!!! Please forgive me!

  8. I agree we are not perfect! I think I would have done the same thing with the tick! I HATE bugs!!!!! Spiders dont bother me but ants and mosquitoes are on the top of my kill list! I have always hated ants especially when they make their way in my house and into the pantry. Thanks to those little f'er's I have to throw so much away. I warn them every year to stay away and they will live. Hahahaha Im not sure they listen but it helps me in some way and they havent made their way into my home in 2 years...knock on wood!

  9. I am terrified of spiders, I just can"t get used to them. I'll admire them from a distance and let them do their thing outside but if they're in my apartment I kill them. I hope that doesn't make me less of a vegan...and I do feel kinda bad after.

    I do however rescue worms and snails trying to make there way across the sidewalk in the sun because I know they'll either bake in the sun or get stepped on. I hope this somehow evens things out...or maybe I'm trying to justify my killing of spiders lol.

  11. Anonymous, I once hit a bird on the way to work one morning. It's the worst feeling, but you have to know there are times when it can't be helped. Don't be too hard on yourself.
    We're in the midst of a five month drought here in Houston, and this has brought those nasty cockroaches into our home. I refuse to kill spiders (or most bugs for that matter), but there are times when one has to draw the line. We've had the exterminator here twice. It's not what I would have preferred, but ....
