Grease your pans people! I was so excited to take a pretty picture of the whole cake with the cinnamon walnut drizzle all over it. I take it out of the oven, let it cool. I go to take it out of the pan and it's stuck. Then I realize I forgot to grease the pan. Wow, I'm a genius. So I managed to slice it in the pan and still get a pretty slice! It's so delicious and a really great autumn/winter dessert. I can't wait to make this one again!
Ingredients:
- 3 1/2 cups flour
- 2 tsp baking powder
- 2 tsp baking soda
- 2 tsp cinnamon
- 1/2 tsp salt
- 1 cup of maple syrup
- 2/3 cup oil
- 1 1/3 cup water
- 1/4 cup non-dairy milk
- 1 tsp vanilla extract
- 1 tsp almond extract
- 2 tsp maple extract
- 1 tbsp apple cider vinegar
Preheat the oven to 325F. Lightly coat the bundt pan with cooking spray. Don't forget!
Whisk together the flour, baking powder, soda, cinnamon, and salt in a bowl. In a larger bowl, whisk together the maple syrup, oil, vanilla, vinegar, almond and maple extracts, and water. Stir in the flour mixture until blended.
Pour the batter into greased bundt pan. Bake 50-55 minutes or until a toothpick comes out clean and the cake starts to pull away from the sides of the pan. Cool in the pan on a rack for 20 minutes. Unmold onto the rack and cool completely.
